Caper berries are the fruit of the caper plant, Capparis Spinosa, which is a bramble bush native to the Mediterranean and parts of Asia. The buds of the caper plant are hand picked in the morning, before flowering, and are pickled in brine. The caper plant can be found growing wild throughout the Mediterranean and its buds, or capers, are commonly used in various regional cuisines. Caperberries, the fruit, do not share the same widespread usage as capers do. Caperberries are used almost exclusively in Spain, the leading cultivator of these stemmed fruits which are approximately the size of a cocktail olive. Since Caperberries are more pungent and can withstand heat better, they are often used in place of the more delicate caper in cooking. The piquant flavor of the caper comes from a mustard oil glycoside named glucocapparin (methyl glucosinolate), which releases the highly volatile methyl isothiocyanate. Since high temperatures will destroy this oil, caperberries are used to achieve "caper" flavor and aroma in sauces or other dishes where boiling is indicated. Espelette Pepper Powder (Piment d'Espelette) (AOC)

Piment d’ Espelette (AOC) is the beloved chile pepper of the Basque country. Some varieties of chile peppers are given treasured status in certain regions of the world, where they are celebrated in art, legend, the kitchen, and festivals. Paprika has such status in Hungary, the jalapeño in Laredo, Texas, and the mole varieties ancho and pasilla in central Mexico. The Espelette Pepper has become a cultural and culinary icon in Basque country where it has gained controlled-name status. When Columbus brought chile peppers to Europe from the Caribbean after his second voyage in 1493, they were first grown in monastery gardens in Spain and Portugual as curiosities. But soon the word got out that the pungent pods were a reasonable and cheap substitute for black pepper, which was so expensive that it had been used as currency in some countries. It is believed that chiles were introduced into the Nive Valley by Gonzalo Percaztegi in 1523, but it wasn't until the 17th century that it received its own genus and not until the 19th century that it acheived its status as one of the most loved peppers worldwide. In 1999 AOC was granted to Espelette peppers, or "Ezpeletako bipera" in Basque language, giving it the same protection as more famous names, such as Champagne sparkling wine. Only ten communities are allowed to use the name Espelette. Piment d’ Espelette is often used as a substitute for black pepper in the Basque country and in common Basque dishes such as spicy Piperade. Use it on grilled meats, ham (jamon) or in sausages. Fleur de Sel de Guerande Sea Salt

Fleur de Sel is an all natural sea salt from Brittany France. This particular Fleur de Sel (flower of salt) is hand harvested in the town of Guerande between May and September. The salt fields of Guerande are long and narrow so that an artisan paludier (salt harvester) can sweep the top of the evaporating sea water to harvest the precious sel gris de Guerande (hand harvested salt with a grey cast). The harvested sea water is drawn into an area lined with clay where the sun and wind help evaporate the water and the layers of salt are raked away. That single days evaporation of salt crust is harvested as the Fleur de Sel. For every 80 pounds of sel gris produced, there is one pound of Fleur de Sel that is harvested. Rich in trace elements, the taste of Fleur de Sel is the complex balance of the sea and her minerals with small flaky crystals, a moist texture and slightly grey/pink cast. It is used generally to finish a dish, as a condiment, rather than a spice. Fleur de Sel de Guerande is a natural compliment to fresh raw vegetables and salads and can elevate the flavor of grilled meats and fish.
